This course will allow you to recognize the basic categories and varieties of potatoes and explain how moisture and starch content affects the characteristics of the potato after cooking.
You will learn the different cooking methods: boiling, steaming, pureeing, baking en casserole, baking and roasting, sautéing, and deep frying by applying a variety of familiar potato dishes and the cooking method used to prepare them.
